Radish leaf soup

Ingredients for 4 persons) : 1 bunch of radish tops, 1 liter of water, 4 potatoes, 1 onion, salt, pepper and thyme.

Preparation : peel the potatoes and the onion, wash them and the tops. In a saucepan, pour the water and add the vegetables. Bring to a boil and let cook. To mix everything. Add a spoonful of butter, a dash of fresh cream. Serve with bread croutons.

Chicken terrine with lemon jelly

Ingredients for 4 persons) : 4 chicken fillets, 2 lemons, 25 cl of white port, 75 cl of chicken broth, 1 bouquet garni (composed of thyme, bay leaf, parsley, all tied up), fresh herbs (parsley, chives, tarragon, etc.) , 1 clove of garlic, salt and pepper and 6 sheets of gelatin.

Preparation : add the port to the chicken broth as well as the bouquet garni and bring to the boil. Poach the chicken breasts in the boiling liquid for about 15 minutes. Check the cooking and remove them with a slotted spoon, cut them into pieces and place them in a terrine. Sprinkle them with lemon juice, salt and pepper. Chop the fresh herbs and garlic; play them with chicken breasts and mix. Book at cost.

Prepare the jelly: strain the broth, take 50 cl and add the juice of the second lemon. Meanwhile, soak the gelatin sheets for 5 minutes in cold water. Squeeze them and dissolve them in the hot broth, stirring and removing them from the heat. Carefully pour the jelly into the terrine. Completely cover the chicken breasts. Spread a few thin slices of lemon, a decoration of parsley and chives on the surface. Place overnight in the refrigerator.

Potatoes with thyme

Ingredients : potatoes, tomatoes, olive oil, thyme, salt and pepper.

Preparation : peel the potatoes and cut them into thin slices. Arrange in a baking dish a row of potatoes, a row of sliced ​​tomatoes. Scrape the thyme leaves and sprinkle over the vegetables. Add a second layer of potatoes and tomatoes. Season with salt and pepper and drizzle with a generous drizzle of olive oil. Place a sprig of thyme and bake. As soon as the vegetables are cooked to perfection, stop cooking and enjoy.

Peach skewers with honey and thyme

Ingredients for 4 persons) : 4 ripe peaches, 4 tablespoons of honey and fresh thyme.

Preparation : cut the peaches in half. Remove the pits. Slice them into quarters. Thread onto small wooden skewers. Drizzle with honey and sprinkle with thyme leaves. Place on the barbecue grill and cook for about 5 minutes. Serve with a scoop of vanilla ice cream.
